- 4 tripletail fillets (6 to 8 ounces each)
- 3 Russet potatoes (shredded)
- ½ cup extra virgin olive oil
- 1 cup flour
- 4 eggs
- 1 cup milk
- 1 cup heavy cream
- 2 Tablespoons butter
- Salt and white pepper to taste
- 2 Roma tomatoes
- ½ finely chopped yellow onion
- 2 tablespoons coarse-ground mustard
- ½ cup finely chopped parsley
